Strawberries with Lemon Juice

Ingredients

Serves 4
  • 500g (1lb) strawberries
  • The juice of 2 lemons
  • 100g (scant 4oz or ½ US cup) castor sugar

Method

  1. This recipe uses beautiful fragrant strawberries when they are in season.  I prefer to use wild ones, but it seems that they are rapidly disappearing from the wild.  The ones that are force-grown in greenhouses are not the same.  It is natural for Italians to eat strawberries with fresh lemon juice and sugar, just as other people eat them with fresh cream.  The flavour of the strawberries is enhanced by the lemon juice.  Naturally, the same applies for raspberries and all soft fruits.

    Clean the strawberries, without washing them if possible.  Put them in a dish. Pour the lemon juice on and then the sugar.  Mix well and serve right away.  The lemon juice has a very strong effect, so it is advisable to put it on just before serving.
